As of August 2, 2010, nine approved Stara Planina standards for meat products from pork, beef and poultry came into force. These are minced meat, kebabs and meatballs, raw sausage and karnacheta, cooked and cooked-smoked short-lived sausages, durable cooked-smoked salami, minced poultry meat, kebabs and meatballs from poultry meat, raw sausage and karnacheta from poultry and cooked and cooked -smoked short-lived poultry sausages. Cooked-smoked short-lived sausages included in the standards are sausages, sausage and sausage.
The products produced according to these standards are called "Stara Planina". The technological requirements for the production of the products were developed by the Expert Council for Food Safety at the National Veterinary Service (one of the structures that merged in the BFSA) together with the Association of Meat Processors in Bulgaria and leading meat processing technologists. The approved standards describe in detail the mandatory health and hygiene indicators and standards, the technology of production, packaging, labeling and packaging and the requirements for transport and storage, sampling methods and test methods.
